Long queues will be seen outside the shop, which is open only for 1.30hrs (5.30 to 7.00) everyday or till the stocks last, that is maximum 2 to 3 hours. Halwa is usually made from crushed juice taken out from well-soaked fresh wheat berries. The taste changes even if it is not soaked well or not boiled properly. Tirunelveli halwa shops are one that carefully looks after both. The most important thing about halwa is the way it is stirred . Many halwa shops, because for its bulk production they go for machinery crushing and stirring of wheat juice but iruttu kadai always opts manual stirring ,though it's tedious!! who knows,this could also be one of the reasons behind the mysterious taste !!
