What is Virgin Coconut Oil?Any coconut oil made from a non-copra style of extraction can be called virgin organic coconut oil. When done properly it doesn't need to be heated or fermented to remove moisture. DME describes a process in which the oil is extracted directly from the kernel. The coconut kernel is first shredded and dried in an oven to about 10 to 12% moisture. The dried, shredded coconut is then placed into a press and the oil is expelled. The high level of moisture left from the kiln/oven drying process needs to be removed from the oil. If the moisture is not removed it can cause the oil to go rancid extremely fast.
