Kodo is a tufted grass that grows up to 90 cm high. The grain may vary in colour – from light red to dark grey.The grain is enclosed in hard, corneous, persistent husks that are difficult to remove. As with other food grains, the nutritive value of Kodo millet protein could be improved by supplementation with legume protein. Kodo millet was domesticated in India almost 3000 years ago. It is found across the old world in humid habitats of tropics and subtropics. It is a minor grain crop in India, and an important crop in the Deccan plateau. Kattuyanam rice is a native variety of rice grown in Tamil Nadu. Also known as Red Rice, this is one of the traditional Red Rice varieties of South India.  This paddy variety is well suited to organic farming because it is hardy and demands little to no fertilizers or pesticides. Kattu means forest and Yana means Elephant in Tamil. This variety of paddy grows so tall that it can hide a wild elephant and so why the name came about. It takes about 125 to 135 days for this crop to yield. This rice is usually unhulled or partially hulled and the husk is red in color. The color is due to the presence of anthocyanins like apigenin, myricetin and quercetin and bran. Anthocyanins possess antidiabetic, anticancer, anti-inflammatory, antimicrobial, and anti-obesity effects, as well as prevention of cardiovascular diseases. This rice has both soluble and insoluble fiber and so aids digestion. It has low glycemic index and so lowers blood glucose and so is ideal for diabetic patients.
