White Pepper
White Pepper is obtained when the outer part of the pericarp of the Black pepper peppercorns are removed. The outer coating is softened either by keeping the berries in moist heaps for 2 or 3 days or by keeping them in sacks submerged in running water for 7 to 15 days, depending on the region. The softened outer coating is then removed by washing and rubbing or by trampling, and the berries are spread in the sun to dry. White Pepper has a milder, more delicate flavor than black pepper, and is useful for adding a peppery flavor to light-colored sauces and soup without adding black color. The flavor is less pungent than that of black pepper. White Pepper is hotter than black because it contains more piperine, the volatile oil that gives pepper its characteristic flavor. White Pepper contains slightly less essential oil than black pepper. It is preferred in Europe, especially France, and is now popular in Japan for sukiyaki.
