The dual stage PHE utilizes ambient water (30°C) in the first stage to cool the wort from 95°C to 40°C and ice water of (5°C) in the second stage to drop the wort temperature to 12°C to 20°C.The water used in this process is transformed to 85°C hot water which can be stored in a tank for use in the Mashing process.
