It is used as an ingredient in bread & other yeast fermented bakery mixes.Benefits :Backed by the strength of our fermentation expertise and in an effort to meet the unique needs of professional bakers, our group has developed and optimize DOUGH BAKE bread improver. This bread improver is especially useful in improving bread volume, crumb structure, crust colour, fermentation, softness and whiteness in texture of bread.Ingredients : Flour improvers (E- 1100 and E-170), Antioxidant (E-300), Yeast food (E-510) blended in Corn starch & soya flour.Dosage : 100gm of DOUGH BAKE bread improver is added to 100 Kg of flour at the beginning of the mixing process. This quantity may be varied according to the requirement of bread desired.Packing : 5 Kg in One poly bag & finally 5Kg x 4 Poly bags packed in 20 kg carton. I request if you could possibly try in both yeast leavened and non-leavened products. I assure you of the change in finished products attributes. You may need to optimize the application dosage depending on the dough resting time and process, and you can play around the dosage of Taqa B50 from 500ppm – 700ppm. o You can also alter the dosage of water if dough is hard/soft. · TAQA B200 – 200 Gms in 100 kg & for rusk industry it shall be slightly more like 240/250 Gms in 100 Kg.
