The oils and fats are a group of organic compounds called 'Fatty Acids' and form a vital part of daily food, which is used as a raw material for making soap. These fatty acids are made up of union of several carbon atoms in a straight chain with hydrogen and oxygen atoms. Further, a single chain comprises 6 to 24 carbon atoms, wherein 12,14,16,18 and 20 carbon chains are common. When the fatty acid reaches saturation point and the combination of carbon atoms with hydrogen is incomplete there is a possibility of further addition of hydrogen. More the un-saturation lower is the melting point of fatty acid as such, many oils containing un-saturation remains as liquids at normal temperatures. Besides, the ones that contain low amount of un-saturated acids become solid or semi solid fats at normal temperatures.Apart from this, the liquid oil can be converted to a required degree of hardness by reducing its un-saturation with the controlled reaction with hydrogen. Thus, vanaspati is such a product obtained by controlled hydrogenation of edible liquid oils (called 'soft oils' in the industry, this ensures that its hardness, consistency and grainy appearance resemble natural ghee. The addition of hydrogen in oil occurs when the hydrogen gas is brought in contact with the oil at a higher temperature in the presence of metallic nickel catalyst prepared under controlled conditions. Milk is first received in a dump tank from the road milk tankers. It is then chilled in a chilling unit to 4°C. This chilled milk is then pasteurized in a milk pasteurizer and cream is separated from milk in by the cream separator to get skimmed milk. Milk is standardized depending on the requirement of toned milk, double toned milk, skimmed milk or full cream milk. The separated cream is further processed to manufacture ghee and butter. The pasteurized skimmed milk, toned milk or double toned milk is sent for packing in pouches in the packing machine for various capacities like ½ kg, 1 kg pouches. The plant will be in operation for 20 hours in a day. The Gowardhan factory was started in the year 1992. It is located in the milk belt of Manchar on the Mumbai Nashik highway. Unit 1, processes raw milk into processed pouch milk, curd, paneer, ghee, and shrikhand. The huge investment in infrastructure has enabled the unit to process up to almost 12 lakh litres of milk daily. The factory has employed around 600 fixed + daily wage workers. Thus, being the source of income for farmers in the neighbouring towns and villages.

Before throwing light on the vanaspati ghee or the vegetable fat, lets discuss vanapati. In Sanskrit, vanaspati refers to the entire plant kingdom including herbs, flowers, seeds, etc. However, in ancient texts like Charaka Samhitā, Sushruta Samhita and the Vaisesikas, it is limited to plants that bear fruits but no evident flowers. But now, it includes everything about plants. Vanaspati ghee or vegetable fat is obtained by controlled hydrogenation of edible liquid oils soft oils, so that its hardness, consistency and rainy appearance resembles natural ghee (clarified butter). The oil is derived from plants and are composed of triglycerides, a glyceride in which the glycerol is esterified with three fatty acids.
