    The mesquite tree grows to a height of up to 12 meters and has a trunk with a diameter of up to 1.2 meters. Its leaves are deciduous, bi-pinnate, light green, compounded with 12 to 20 leaflets. Flowers appear shortly after leaf development. The flowers are in 5–10 cm long green-yellow cylindrical spikes, which occur in clusters of 2 to 5 at the ends of branches. Pods are 20 to 30 cm long and contain between 10 and 30 seeds per pod. A mature plant can produce hundreds of thousands of seeds. Seeds remain viable for up to 10 years. The tree reproduces by way of seeds, not vegetatively. Plant Source : Anogeissus latifolia Family : Combretaceae Properties:  The colour of the gum varies from whitish yellow to amber; though the presence of impurities sometimes imparts a brownish colour to the gum.  Gum ghatti is partly soluble in water and forms a colourless mucilage.Gum ghatti is a moderately viscous gum lying intermediate between gum arabic and gum karaya. lt forms viscous solutions at concentrations of about 5% or higher and exhibits typical non-Newtonian behaviour. The emulsifying properties of gum ghatti are excellent and considered to be better than gum arabic and thus used in more difficult-to handle systems.Gum ghatti solutions are sensitive to alkali. Viscosity increases sharply with pH upto a maximum at about pH of 8.0 and above that the solutions tend to become above that the solutions tend to become stringy. Gum Ghatti Product specification:  Gum ghatti is approved for food use and is in the GRAS list under the Food, Drug and Cosmetic Act, U.S.A. It is non toxic and is not metabolized in human.  Storage and handling : Graded gum ghatti is usually packed in burlap bags of 50 kg capacity for storage and transportation purposes. Warehousing in a cool, dry place is recommended for extended storage.     Gum ghatti is a water-soluble complex polysaccharide exuded from the bark of the tree anogeissus latifolia of the family combretaceae. The tree is quite large and found in large numbers in the dry, deciduous forests of india and ceylon. The crude gum has a glossy fracture and occurs in rounded tears, which are normally less than 1 cm. In diameter. It also occurs in larger vermiform masses. The color of the gum exudates varies from off white to dark brown. The lighter the color, the better the quality. Since ghatti and karaya are found in the same geographic areas, the harvesting and grading are similar. The best crops are picked when the monsoon is not occurring, and the largest crop is harvested in april. After picking the gum, it is dried in the sun for several days before being taken to the exporters in bombay. It is then hand sorted according to color and impurities into various grades before being exported to the united states.
