Nutmeg tree, a species under Myrystica fragrans Houtt, produces two separate spices – Nutmeg and Mace. Nutmeg is the dried kernel of the seed and Mace is the dried aril surrounding it. Mace essential oil is obtained by the steam distillation of dried aril of Myrystica fragrans Houtt. The oil is a pale yellow to reddish yellow liquid, with a sweet, spicy and slightly woody undernote. The oil is mainly used for flavouring preparations, especially in soft drink formulations. The main components are pinenes, Sabenene, Terpineol and Myristicin.

Nutmeg is a basic fixing utilized in sauces, cleansers, confectionaries and a few heated merchandise. Certain culinary experts include nutmeg as a flavoring operator. The nutmeg tree is known as 'jathi' in Malayalam and its natural product, Jathikka. Nutmeg in its unripened structure is light yellow and circular, and once it gets ready, it would have a hard, dark seed and a red mace (dried reticulated aril) around it. The nutmeg tree gives two 'organic products' — mace and nutmeg. In the event that you like to visit the estates to see this beautiful natural product, you can go to South India, where the majority of the development happens.
