Nutmeg

Nutmeg is the seed kernel inside the fruit and mace is the lacy covering (aril) on the kernel. The nutmeg seed is encased in a mottled yellow, edible fruit, the approximate size and shape of a small peach. The fruit splits in half to reveal a net-like, bright red covering over the seed. This is the aril which is collected, dried and sold as mace. Under the aril is a dark shiny nut-like pit, and inside that is the oval shaped seed which is the nutmeg. Nutmegs are usually sold without the mace or hard shell. Used in small dosages nutmeg can reduce flatulence, aid digestion, improve the appetite and treat diarrhea, vomiting and nausea. Nutmeg’s flavor and fragrance come from oil of Myristica, containing Myristica, a poisonous narcotic. Myristica can cause hallucinations, vomiting; epileptic symptoms and large dosages can cause death. These effects will not be induced, however, even with generous culinary usage.

The exact origin of this golden spice is not known but it is believed to have originated from Southern India . Turmeric has been popularly used in these parts of the world for thousands of years as a condiment, dye, drug and cosmetic in addition to its use in religious ceremonies. This common cooking spice is a part of the ginger family and is grown as a root in diverse tropical conditions. Once ripe, it is dug out and boiled until it turns soft and its colour and flavour gets enhanced. Then its skin is peeled away to reveal the beautiful yellow colour inside before it is dried and ground into the fine yellow powder we use in our dishes. In order to retain its bright colour and flavour, make sure the turmeric is stored in a cool dark place, in a tightly sealed container that is kept away from direct sunlight or heat. Though turmeric has been around for thousands of years, the spice continues to surprise researchers with its wide range of health benefits. Turmeric is a natural painkiller, it helps clear your skin, reduces the risk of cancer, acts as a metabolism booster, an antidepressant, and an immune system booster. So how do you add a bit of this magical yellow powder to your daily diet? Well the easiest and most trendy way is to add it to your drink of choice. Today turmeric latte is considered to be a drink fit for the kings and has a cult like following. They are being sold at cafes around US and is gaining fans in the UK as well. Since turmeric has a bitter, warm and peppery taste and its fragrance is slightly similar to orange and ginger, a couple of dashes of this powder will go well with smoothies or milk based teas. You can start your day with a boost of energy by making turmeric coffee, lattes, mochas or hot chocolates. If you would like to wind down in the evening, then just infuse it with hot water or broth for a healing beverage to sip before you hit the bed.

Nutmeg & Mace are two distinctly different spices produced from a fruit of an evergreen tree usually 9-12 mtr high. Mace is the dried reticulated ‘aril’ of the fruit and nutmeg is the dried seed kernel of the fruit. The trees are normally unisexual, bearing either male or female flowers. The male flowers are born in clusters, whereas female flowers are often solitary. Fruit is a fleshy drupe, spherical in shape, pale yellow in colour with a longitudinal groove in the centre. When the fruit mature it burst open along the groove exposing the bright attractive mace, covering the hard black, shiny shell of the seed called nutmeg. Both nutmeg and mace are used as condiment particularly in sweet foods. The spice in the ground form is mainly used in the food processing industry especially as a standard seasoning in many Dutch dishes. Nutmeg oleoresin is used in the preparation of meat products, soups, sauces, baked foods, confectionaries, puddings, seasoning of meat and vegetable etc. The fleshy outer cover of the fruit is crystallized or pickled or made into jellies. Mace is used in savoury dishes. It is used as a drug in Eastern countries because of its stimulant, carminative, astringent and aphrodisiac properties. Excessive doses have a narcotic effect. Nutmeg oil is used in cosmetics and toiletries.
