India is the largest producer of turmeric in the world with annual production of more than 4 lakh tonnes i.e. nearly 90% of global produce. About 8% is exported and rest is consumed locally. Andhra Pradesh and Tamilnadu jointly account for over 50% of turmeric production. Kerala, Maharashtra, Karnataka, Orissa and Bihar are other important producing states. The commonly grown turmeric varieties are Sugantham, Suvarna, PCT, Roma PTS. These contain 6-7% oleoresin of which 35% is curcumin. The ‘Lakadong’ variety of turmeric, grown in Meghalaya, contains 7.4% curcumin, reportedly highest in the world. Turmeric is also produced in Arunachal Pradesh and Assam. Bhut jolokia , the hottest chilli in the earth is originated in the North - Eastern region of India . The plant grows at the height of 120 cm bearing 150 fruits. The flowers are white, 2-3 at a node, and fruits are blood red in color, conical measures about 2.5 to 3.5 inches in length and a 1 inch width with pepper. The hot flavour of chillies is due to the presence of a group of seven closely related compounds called capsainoids, but capsaicin (8-methyl-N-vanillyl-6-nonenamide) and dihydrocapsaicin are responsible for approximately 90% of the pungency. Due to its extra-ordinary pungency level and irritating properties it has also been used as lachrymatory agent (a chemical compound that irritates the eyes to cause tears, pain, and even temporary blindness). Our product is Semidried whole pods, dried under controlled environment at 60 °C, stalked, contains about 6-8% moisture, processed from freshly picked pods from company farms cultivated in an almost chemical-free environment, no chemicals of any form added during processing. Bhut Jolokia has many uses ranging from cooking in different forms to medicinal uses. This plant is produced seasonally and thus can be found at particular times in the market. It is used as a taste enhancer and a spice in many curries.It is also used in making pickles .Bhut Jolokia can be found in raw form and dried form.
