Soy protein isolate is made by first dissolving defatted soybean flakes in water. The protein-rich liquid fraction is separated from the solid fraction. The proteins from the liquid fraction are then treated again using an isoelectric precipitation method, then separated, washed and dried. The end product is a light-yellowish fine powder with a characteristic aroma and neutral acidity.
