Purple flowered saffron is a wonderful plant to which nature has given fascinating fragrance, pleasant flavour, a beautiful colour, and a host of other qualities. Believed to have been originally native to the Mediterranean Area, with Asia Minor and Iran. Restricted majorly to these three places in the World - Kashmir, Iran, and Spain - and with Iran as the major producer of Saffron with more than 65% of world's saffron production, saffron stands to be the World's most expensive spice by weight. Saffron is produced from saffron flowers and each saffron flower has three stigmas, which are the distal ends of the plant's carpel. When the Saffron flowers are picked, the style and stigma are separated and the stigma is cut at a point where it is joint with the style. It is called Mongra / Mogra SAFFRON in India, and the same Saffron is called ZAFRAN-E-SAR-GOL(saffron from the top of the flower) in Iran. Mongra/Mogra Saffron contains ten per cent more pigment in comparison to Lachha Saffron and is the most preferred forms of Saffron both for commercial and household use. With the onset of spring, Morels start appearing in the woods of Kashmir valley. These are collected and dried and are an economically important wild species. It is impossible to explain the magic of Morels which leaves thousands of people, in April and May with an obsession of finding them in the woods untill the season is over. Locals travel miles and miles in search of Morels; Hours and hours of walking in mud, spalshing through creek beds, leads people to just a few Morels and when they are dried they make just a few grams! It takes a lot of work to collect a kilo of Dried Morels and from about 12-15 kilos we get a kilo of DRIED JUMBO MORELS! During this period strong colonies of bees gather nectar from far away places and produce this white Acacia Honey. This honey is also called Eye Honey, for its use in treating the eye infection.
