White Tea
Darjeeling White tea is made by drying the selected buds. The minimal processing results in a light liquor with excellent flavour. Significant quantities of flavour is present in the buds when compared to the other parts of the leaf which is what sets up Silver Needles a class apart. White tea fanning are also available which are suitable for tea bags. They are however made from two leaf and a bud unlike silver needles.

Vanilla takes a long time to cultivate. It can take 14 months for the pods to grow after pollination, plus another nine months after that until they’re ready to be picked. Vanilla beans are picked while still green and then dried in the sun for weeks. During the drying process, each pod is massaged by hand to bring out the natural oils. Each bean is sorted by quality and graded based on length, appearance, etc, etc. Some make the cut, some make extract and powder.
