Recipe Indian Stir Fry Cabbage North Indian Style - Bund Gobhi Ki Subji Ingredients 1/2 medium cabbage sliced fine 1 baking potato quartered lengthwise and then sliced thinly 1 cup frozen or fresh peas (optional) 4 tbsp. vegetable/ canola/ sunflower cooking oil 10 curry leaves 1 tsp mustard seeds 2 green chilies chopped fine 2" piece ginger grated 2 ripe tomatoes cut into 1" cubes 1/2 tsp turmeric powder 2 tsp coriander powder 1 tsp cumin powder 1 tsp red chili powder (use less for less spicy) Salt to taste Fresh chopped cilantro to garnish Method Heat the oil in a pan on a medium flame. Add the mustard seeds, green chilies, curry leaves and fry till the seeds sizzle and splutter. Add the ginger and stir. Add the tomatoes and cook till they are soft. If you are using peas and potatoes, add them now. Cook for 4-5 minutes. Add the cabbage and then the turmeric, coriander, cumin, red chilli powder and salt to taste. Mix well. Cover, simmer and steam with a lid on for 10 minutes. Garnish with fresh chopped cilantro and serve with hot Chapatis (Indian flatbread), yogurt, dal and Indian pickle. Kotah stone is being used extensively as excellent flooring stone being very tough, compact and can take mirror polish. Kota Limestones are naturally riven flooring stone. Mining for Kotah Stone has started some 70 years back with a production of few thousand square feet. It has multiplied many times over these years. Present level of production is 250 million Sq.ft. Mining of Kotah Stone over the years has been all manual except removal of over burden. The excavation of over burden 12-15mm thick had been mechanized since 1983 only. After removal of overburden, the layers yielding Kotah Stone have been separated by chiesel and crow-bar followed by sizing and splitting the layer along natural cleavage to give Kotah Stone Slab/Tile ready to use. The mining has been very selective. Only those layers which could be splitted upto a maximum of 3" thickness and could be cut to size manually by chiesel and hammer have been mined. The rest have been thrown as waste. Kota Stone (Lime Stone) is known for its wide applications due to its durability and beautiful appearance.
