Dill (Anethum graveolens) is an annual herb in the celery family Apiaceae. It is the sole species of the genus Anethum. Dill oil is extracted by steam distillation, mainly from the seeds. The product is a free-flowing liquid, with a yellowish to brownish-yellow colour. It has a characteristic fresh, warm, spicy, carvonic odour. Major components in dill seed oil are Dihydro carvones, carvone and apiol. Indian dill oil is very rich in dill apiole, a molecule used for bio-pesticide formulation. The oil is used for flavouring applications, pharmaceutical preparations and in the manufacture of soaps.
