Soy lecithin is edible used in various confectionaries, bakery products and pharmaceutical industry for coatings. This is a very good emulsifier used in making of margarines. If extracted oil water de-gummed early and the hydrated gums dried immediately then the quality of lecithin produced becomes good, that is lighter in color and less in acid value and peroxides too. At this temperature, moisture in vapour form condensed to liquid form, and separated from the compressed air by moisture separator and discharged to drain port through automatic drain valve.
