OSSEIN – A Pre-cursor to collagen Ossein(Protein) is a process where the dried fish scales are demineralized and calcium is removed from the scales (also called decalcification). The scales are made ready for collagen peptide extraction. Ossein is a collagen precursor pretty close to 100% protein once moisture is deducted.
