Papain, also known as papaya proteinase I, is a cysteine protease enzyme present in papaya (Carica papaya). It is extracted from the latex of the papaya fruit. It is extracted in crude form and can be further purified to a refined powder. Papain breaks down tough meat fibres, and has been used for thousands of years to tenderise meat.
