Tamarindus indica, commonly known as tamarind tree, is one of the most important multipurpose tree species in the Indian sub-continent. It belongs to the family Caesalpinioideae and almost all the parts of this tree are found to be of some use. The tamarind seed consists of 30% hard but brown seed coat and 70% kernel. White kernel obtained from tamarind seed is used to produce Tamarind Kernel Powder and its derivatives like Carboxy Methyl Tamarind Gum. Tamarind Seeds and its derivatives have various application in Food, Chemicals, Pharmaceuticals, etc. The kernels contain polysaccharides (jellose) having a very good sizing property or employed as a sizing agent for jute and textile yarns.
