Polyfloral honeys, also known as wildflower honey varieties are produced by honey bees using the nectar from many different flower species. Such honeys do not display the pure characteristics of any of their production level nectar sources. Different varieties will have their own, unique appearance and aroma. But because only certain nectars give honey a very light pigment and polyfloral honeys contain different nectars, they are often a medium amber color or have darker, brown-reddish reflections, but this is not a rule.
