The product laden trays are placed on the shelves provided in the chamber. After which the door is locked. The chamber is vacuumised. Heating system is also started. The hot oil water starts circulating inside the shelves in a serpentine manner. Due to this configuration, the heat transfer from the shelves to the trays is quite fast. The heat is transferred to the product from the shelf on which it is placed due to conduction and from the shelf above due to radiation. The solid cake uses a minimum amount of solvents for cost effectiveness. In this process, solids are evenly distributed on each plate.
