Turmeric is the ancient and sacred spice of India.Indian Turmeric, which is also popularly known as "Indian Saffron",because of its bright yellow color, is considered the best in the world. It is the dried rhizome of a herbaceous perennial tropical plant. The primary rhizomes which are rather round in shape are called bulbs while the thin long secondary rhizomes are fingers.A number of varieties are available in the country and are known mostly by name of locality where they are cultivated. Bird chilly is used in making hot sauces as pepper sauce and Tabsco sauce.
